New Year Chopped Salad

Begin the New Year on a fresh note with our liver-loving dish! Ready in just 10 minutes, this salad stars crisp cos lettuce, celery, cucumber and corn kernels, beautifully paired with your choice of protein. We used tender chicken bites for a sweet-savoury balance. 

Tailor it for your tastebuds or dietary preferences by swapping the chicken for:

  • 1 tin of chickpeas for a plant-based alternative
  • 4 boiled eggs
  • 200g smoked salmon 

Drizzle over the creamy Dijon-infused dressing plus a burst of citrus to bind all the fresh flavours together. 


Ingredients:

  • 1 head cos lettuce, shredded
  • 2 stalk celery, finely diced
  • 1 Lebanese cucumber, diced
  • 1 cup corn kernels
  • 2 tbsp red onion, finely diced
  • 2 pickles, diced
  • ½ bunch chives, finely chopped
  • ¼ bunch dill, finely chopped
  • 300g (10.5oz) cooked chicken, finely chopped or 1 tin chickpeas for a plant-based option, or your protein of choice

For the dressing:

  • ⅓ cup Greek yoghurt
  • 1 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp maple syrup
  • ½ lemon, juiced 

Method:

To make the dressing, combine all of the ingredients in a bowl and whisk until smooth. Season to taste with sea salt and black pepper. 

Add all of the salad ingredients to a bowl. Pour the dressing over the top and toss to combine.
